Carrot Cupcakes with Cream Cheese Icing

Mini Carrot cupcakes

Regular Size

I use a tool I got at Sur Le Table. It holds a good amount of batter and eliminates drips. I get pretty uniform cupcakes.

One tip. I used a Cuisinart to shred my carrots and they were not fine enough. Next time I will use my hand shredder. I anticipate these will taste better tomorrow.

ICING RECIPE: http://www.wilton.com/recipe/Cream-Cheese-Icing
I did add about 1 teaspoon of meringue  power in hopes of thickening it up. I also omitted the milk and zest and added vanilla.

Adding Mix Ins to Batter ....TIPS

Here are handy tips about adding in jimmies to make your batter look like rainbow,  or adding in nuts, candy pieces, or fruit.
Candycane? Date & Nuts? Chocolate, white, peanut butter chips?  Chunks of milk chocolate, white chocolate, thin mints? I wonder how caramel corn would taste?

Dried fruits? Apricots, papaya, coconut, raisins? Nuts? Pecan pie cupcake? YUM!

Chocolate and White Icing...

They turned out pretty. I gave away 12 of these. I am uncertain as to whether they didn't like me or the cupcakes! In any-case, a rather cool reception. It did solidify in my thinking that I will not be going back to that particular group which I had not been to for several  months. (Now I remember why!)

On the other hand, I had my daughter drop off some to two of my neighbors and they were thrilled. Well maybe not THRILLED but certainly appreciative.

What is today's lesson? Forgive those who lack fundamental manners and do not know how to be thankful and gracious! However do not give your time away to spend with people who do not have a basic appreciation and kindness toward you either.

Just Finished My FIRST Birthday Present, Cake! Hubby's Mom....93!

Tomorrow my husband will deliver this cake to his 93 year old Mom! I hope she enjoys it! She requested lemon in the middle.

This is the same one I made last night but without all the food coloring and this was two layers.

2nd class of Cake Decorating........................

Here is Kara, my lovely daughter in law. She has cut the cake in half, made an icing 'dam" and is filling the cake with lemon filling. I FORGOT my box full of equipment soo we didn't have food coloring! Oh well!  :)

Voila! Now add on the top piece. The icing dam prevents the filling from oozing out.

Next put on the "crumb layer of icing", or the "dirty icing". This is a thin layer that you let sit for a while and harden. Then you add another layer on top of this and you will not see a single crumb!

Next trace your design on parchment paper, flip over and out line in a thin piping of icing and place on cake. Lightly press and pull up! Now you have an outline to fill in!

On the left a cupcake on the right a hamburger! Remember we forgot the food coloring!
