Carrot Cupcakes with Cream Cheese Icing

I use a tool I got at Sur Le Table. It holds a good amount of batter and eliminates drips. I get pretty uniform cupcakes.

One tip. I used a Cuisinart to shred my carrots and they were not fine enough. Next time I will use my hand shredder. I anticipate these will taste better tomorrow.

I did add about 1 teaspoon of meringue  power in hopes of thickening it up. I also omitted the milk and zest and added vanilla.
