PERFECT pumkin cake! ...and cream cheese icing..................

 

 

Ingredients:

  • 2-1/3 cups all purpose flour
  • 1 tbsp. pumpkin pie spice
  • 1 tsp. ground cinnamon
  • 1/2 tps. ground ginger
  • 2 tsp. baking powder
  • 1-1/2 tsp. baking soda
  • 1-1/2 tsp. salt
  • 3/4 cup (1-1/2 sticks) butter or margarine , softened or oil (I used oil)
  • 2-1/2 cups granulated sugar
  • 3 eggs
  • 1 can (15 oz.) solid pack pumpkin or 1 3/4 cup cooked pumkin
  • 1 cup buttermilk

Preheat oven to 325°F. Prepare 9 in. x 13 in. cake pan with

In medium bowl, combine flour, pumpkin spice, cinnamon, ginger, baking powder, baking soda and salt; In large bowl, beat butter and sugar with electric mixer until fluffy. Add eggs, one at a time, beating well after each addition. Add flour mixture to butter mixture alternately with pumpkin and buttermilk, mixing thoroughly after each addition.

Step 3

Bake 47-50 minutes or until toothpick inserted in middle comes out clean. Cool in pan on cooling grid completely before frosting with cream cheese icing.
